canning tomatos
The tomatoes in our garden are mostly still green but there were cheap tomatoes in the shop today so I decided to can some tomato sauce.
I made only a small batch out of 3.5 kg tomatoes but I want to do more next week.
I used:
3.5 kg diced tomatoes (not peeled)
3 diced onions
6 diced garlic cloves
2 spoons of salt (1.5 spoons would be okay too)
1.5 spoons of sugar
Some black pepper and sweet paprika
Basil and oregano from our garden
a bit of lemon juice
I sterilised the glass jars in the oven (15 minutes in a tray filled with water on 100 degrees Celsius), filled in the hot sauce, closed the lids and let them cool slowly in order for them to seal well and form a vacuum.
